Class:Hands-on Pickling & Canning Part 2
 We’ll learn to make sauerkraut (a fermented pickle made with dry salt rather than brine), salsa, corn relish, and pickled peppers in vinegar. We’ll do boiling-water-bath canning, and you’ll have three processed jars to take home.

 In this demonstration-style class Chef Neuman will prepare many of the dishes that has made ¡Oba! one of the top-rated restaurants in Portland. Bring your spouse or a few friends for this lively afternoon.

Menu: Trio of ceviches (shrimp, scallop and rockfish,) griddled colombian arepas topped with wild mushroom ragout, Argentinian matambre (rolled stuffed flank steak with jamon serrano, spinach, roasted peppers and parmesan served with a roasted tomato sauce,) Cuban chicken palomillo with tomato-caper relish and basil potatoes, brigadeiros (Brazilian chocolate fudge caramel truffles)
